I am so crazy about this very simple breakfast dish. My wife and my son has grown fond of it too. Every time we make a trip to the grocery in Carrefour I always look for their cooked whitebait or ikan bilis to make this. Of course, it would be great to use fresh ones but this is the best that I can do. If you’re in the Philippines you may look for the fresh ones in the market. Go for the really tiny ones. You may also opt to add tomatoes or even green chillies to make it spicy. I just keep it simple with chopped onions, salt, pepper and a spoon of flour.
200 grams of fresh or cooked ikan bilis, dulong or dilis
a spoonful of flour
a small onion, finely chopped
salt and pepper to taste
oil for pan frying
Rinse the tiny fishies and drain water using a strainer. In a mixing bowl simply mix 2 eggs, flour, onions, salt, pepper and the fish. Blend together. Heat frying pan on medium high and add about a spoon of oil. Using a spoon, fry your torta by the spoonful. Avoid crowding the pan and limit it to 2 or 3 fish cakes at a time depending on the size of the pan. You’ll know it’s done when the edges are dry. That’s your cue to flip them and cook for 2 more minutes. You might want to check again for doneness. Serve on a plate lined with paper towels to absorb the oil.
This really goes well with tomato ketchup as dip. Enjoy your breakfast!
